Description

Delicious stuffed artichokes filled with a savory meat mix.


Ingredients

  • 4 large artichokes
  • 1 lb (450g) ground beef or lamb
  • 1/2 cup (50g) breadcrumbs
  • 1/4 cup (30g) grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup (240ml) chicken or vegetable broth
  • 1 lemon, halved
  • Additional parsley for garnish

Instructions

  1. Prepare the Artichokes:
    • Trim the stems and tops of the artichokes.
    • Remove the tough outer leaves and scoop out the choke with a spoon.
    • Rub with lemon to prevent browning.
  2. Make the Meat Filling:
    • In a large bowl, combine ground beef or lamb, breadcrumbs, Parmesan cheese, egg, minced garlic, parsley, salt, and pepper.
    • Mix until well combined.
  3. Stuff the Artichokes:
    • Gently pull apart the leaves of each artichoke and fill the center with the meat mixture.
    • Press additional filling between the leaves if desired.
  4. Cook the Artichokes:
    • In a large pot or deep skillet, heat olive oil over medium heat.
    • Place the stuffed artichokes in the pot.
    • Add broth to the pot and bring to a simmer.
    • Cover and cook for about 40 minutes, or until the artichokes are tender and the filling is cooked through.
  5. Serve:
    • Remove artichokes carefully from the pot.
    • Garnish with additional chopped parsley.
    • Serve hot, with cooking juices spooned over the top.

  • When selecting artichokes, choose ones that are firm and heavy for their size.
  • You can add different herbs like mint or oregano for extra flavor.
  • For a lighter version, substitute breadcrumbs with quinoa or omit the cheese.
  • If you’re not a fan of ground meat, try a vegetarian filling with mushrooms and walnuts.
