A delicious and moist strawberry layer cake perfect for any occasion.

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 2 cups fresh strawberries (sliced)
- 1/4 cup granulated sugar
- 1 cup heavy cream (chilled)
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Add softened butter, eggs, vanilla extract, and buttermilk. Mix until smooth and well combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a bowl, combine sliced strawberries and granulated sugar. Let sit for 15 minutes to release juices.
- In a mixing bowl, beat the chilled heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Once the cake is completely cool, slice it in half horizontally.
- Spread half of the whipped cream on the bottom layer, top with half of the strawberries.
- Place the top layer of the cake on and repeat with the remaining whipped cream and strawberries.
- Serve immediately or refrigerate until ready to serve.
Notes
- This cake can be made ahead and kept refrigerated.
- Feel free to substitute other fruits if desired.
