Description
This light and fluffy strawberry mousse is refreshing and perfect for warm days. It’s made with fresh strawberries, cream, and is simple to prepare.

- 2 cups fresh strawberries, pureed
- 1 cup heavy cream (at least 35% fat)
- 1/2 cup granulated sugar
- 1 tablespoon unflavored gelatin powder
- 1/4 cup cold water
- 1 teaspoon fresh lemon juice
- 1 teaspoon pure vanilla extract
- Optional: pink food coloring
Instructions
- Prepare Strawberry Puree – Wash and hull fresh strawberries. Blend until smooth. For extra silkiness, optionally pass through a fine-mesh sieve to remove seeds. Aim for about 2 cups of puree.
- Bloom Gelatin – In a small bowl, sprinkle 1 tablespoon unflavored gelatin over 1/4 cup cold water. Let it sit for 5-10 minutes until it swells and becomes jelly-like.
- Warm Puree & Dissolve Gelatin – In a small saucepan, combine 1 cup of your strawberry puree with 1/2 cup granulated sugar and 1 teaspoon lemon juice. Heat gently over medium-low heat, stirring until the sugar dissolves. Do not boil. Remove from heat. Stir in the bloomed gelatin until completely dissolved. Then, stir in the remaining 1 cup cold strawberry puree and 1 teaspoon vanilla extract. Let this mixture cool completely to room temperature.
- Whip Heavy Cream – In a large, chilled bowl, whip 1 cup of very cold heavy cream until it forms medium-soft peaks. Be careful not to overbeat.
- Gently Fold Together – Once the strawberry mixture is at room temperature, gently fold about one-third of it into the whipped cream using a rubber spatula. Repeat with the remaining strawberry mixture in two more additions, folding delicately to maintain airiness.
- Chill and Serve – Divide the mousse evenly among your chosen serving dishes. Cover loosely with plastic wrap and refrigerate for at least 3-4 hours, or preferably overnight, until fully set. Garnish with fresh strawberries or mint leaves before serving.
Notes
- This mousse can be colored with pink food coloring for a festive look.
- Make sure to use very cold heavy cream for best whipping results.
