Ingredients

- 900 g beef chuck, cut into 1½-inch cubes
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 225 g mushrooms, sliced
- 3 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp cornstarch
- 2 tbsp water
- 1 cup sour cream
- Fresh parsley, for garnish
Instructions
- Season beef with salt and pepper. Heat olive oil in a skillet and brown beef.
- Transfer beef to the slow cooker.
- Add onion, garlic, mushrooms, beef broth, Worcestershire sauce, Dijon, and paprika.
- Cover and cook on LOW 7–8 hours or HIGH 4–5 hours, until tender.
- Mix cornstarch with water; stir into stew. Cook 15 minutes until thickened.
- Stir in sour cream just before serving.
- Garnish with parsley and serve hot.
Notes
- This stew can be made ahead of time and stored in the refrigerator for up to 3 days.
- For added flavor, consider adding other vegetables like carrots or potatoes.
