Description

A delicious, healthy treat made with overripe bananas, peanut butter, and oats.


Ingredients

Scale
  • 2 2/3 cups Over Ripe Mashed Bananas
  • 1/3 cup Creamy Peanut Butter
  • 1 cup Chocolate Almond Milk
  • 1/4 cup Maple Syrup
  • 2 1/2 tsp Vanilla Extract
  • 3 cups Rolled Oats
  • 1/2 cup Cocoa Powder
  • 1 cup Mini-Vegan Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray.
  2. Mash enough over ripe bananas to make 2 2/3 cups.
  3. Combine mashed bananas, peanut butter, almond milk, maple syrup, and vanilla extract. Mix well.
  4. Add in rolled oats and cocoa powder. Mix well.
  5. Pour and spread evenly into prepared pan.
  6. Optional: Sprinkle with desired amount of vegan chocolate chips.
  7. Bake for 30 minutes. Then turn the oven off and leave the squares in the oven for an additional 20 minutes.
  8. Once the 20 minutes is up, remove from the oven and let cool.
  9. Optional: Once cooled, garnish with a melted drizzle of creamy peanut butter.

Notes

  • This recipe is perfect for using up overripe bananas.
