A delicious, healthy treat made with overripe bananas, peanut butter, and oats.
Ingredients

- 2 2/3 cups Over Ripe Mashed Bananas
- 1/3 cup Creamy Peanut Butter
- 1 cup Chocolate Almond Milk
- 1/4 cup Maple Syrup
- 2 1/2 tsp Vanilla Extract
- 3 cups Rolled Oats
- 1/2 cup Cocoa Powder
- 1 cup Mini-Vegan Chocolate Chips
Instructions
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray.
- Mash enough over ripe bananas to make 2 2/3 cups.
- Combine mashed bananas, peanut butter, almond milk, maple syrup, and vanilla extract. Mix well.
- Add in rolled oats and cocoa powder. Mix well.
- Pour and spread evenly into prepared pan.
- Optional: Sprinkle with desired amount of vegan chocolate chips.
- Bake for 30 minutes. Then turn the oven off and leave the squares in the oven for an additional 20 minutes.
- Once the 20 minutes is up, remove from the oven and let cool.
- Optional: Once cooled, garnish with a melted drizzle of creamy peanut butter.
Notes
- This recipe is perfect for using up overripe bananas.
- Feel free to add nuts or seeds for extra crunch.
