Description

Deliciously cooked filet mignon for a perfect dinner.


Ingredients

Scale
  • 12 oz filet mignon
  • 1 tsp steak seasoning
  • 1 Tbsp cooking oil
  • 2 Tbsp butter

Instructions

  1. Set 12 oz filet mignon cuts out for 30–60 minutes to take the chill off.
  2. Pat steaks dry with a paper towel. Season generously on all sides with 1 tsp steak seasoning or Kosher salt and pepper.
  3. Preheat your oven to 425°F (220°C/Gas Mark 7).
  4. Add 1 Tbsp cooking oil to a cast iron skillet over medium-high heat. Once shimmering and just starting to smoke, add the steaks.
  5. Cook for 2–3 minutes until a deep golden crust forms. Flip the steaks.
  6. Add 2 Tbsp butter (and optional herbs/garlic) to the pan. Tilt the skillet and spoon the foaming butter over the steaks for 1 minute to “arroser.”
  7. Transfer the skillet directly to the oven. Cook for 4–9 minutes depending on your desired doneness (refer to the Temperature Guide in the post).
  8. Remove steaks to a plate and tent loosely with foil. Rest for 5 minutes before serving to lock in juices.

Notes

  • For best results, let the steaks reach room temperature before cooking.
  • Use a meat thermometer to ensure perfect doneness.
