Description
Deliciously cooked filet mignon for a perfect dinner.
Ingredients

- 12 oz filet mignon
- 1 tsp steak seasoning
- 1 Tbsp cooking oil
- 2 Tbsp butter
Instructions
- Set 12 oz filet mignon cuts out for 30–60 minutes to take the chill off.
- Pat steaks dry with a paper towel. Season generously on all sides with 1 tsp steak seasoning or Kosher salt and pepper.
- Preheat your oven to 425°F (220°C/Gas Mark 7).
- Add 1 Tbsp cooking oil to a cast iron skillet over medium-high heat. Once shimmering and just starting to smoke, add the steaks.
- Cook for 2–3 minutes until a deep golden crust forms. Flip the steaks.
- Add 2 Tbsp butter (and optional herbs/garlic) to the pan. Tilt the skillet and spoon the foaming butter over the steaks for 1 minute to “arroser.”
- Transfer the skillet directly to the oven. Cook for 4–9 minutes depending on your desired doneness (refer to the Temperature Guide in the post).
- Remove steaks to a plate and tent loosely with foil. Rest for 5 minutes before serving to lock in juices.
Notes
- For best results, let the steaks reach room temperature before cooking.
- Use a meat thermometer to ensure perfect doneness.
