Description

A deliciously rich and creamy bread pudding made with day-old bread, milk, eggs, and spices.


Ingredients

  • 4 eggs
  • 2 cups whole milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 6 cups day old bread cubes (brioche or challah recommended)
  • 1/2 cup unsalted butter (1 stick)
  • 2/3 cup granulated sugar
  • 2 tablespoons corn syrup (such as Karo brand)
  • 1 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350 degrees F. Grease a 9×9 baking dish with nonstick spray or butter and set aside.
  2. In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and nutmeg.
  3. Add the bread cubes to the bowl and toss to combine.
  4. Spoon the bread cubes into your prepared baking dish in a single layer, and pour any excess egg mixture over top.
  5. Bake for 40-45 minutes, or until golden browned on top and set in the middle.
  6. Melt the butter in a saucepan over Medium heat.
  7. Add the sugar and Karo syrup, and whisk until combined.
  8. Add the heavy cream, vanilla, and salt, and whisk to combine.
  9. Turn the heat to High and quickly bring the mixture to a boil.
  10. Reduce the heat back down to Medium-low and allow the mixture to simmer for 10 minutes, stirring occasionally.
  11. Remove from heat and pour over the baked bread pudding.

Notes

  • Using brioche or challah gives the best texture and flavor.
  • For added richness, serve warm with a scoop of vanilla ice cream.
