Description
A delicious Thai dessert made with glutinous rice, coconut milk, and ripe mangoes.
Ingredients
Scale
- 1 cup glutinous rice (soaked in water for at least 4 hours or overnight)
- 1 cup coconut milk (preferably unsweetened)
- 1/4 cup sugar (adjust to taste)
- 1/4 teaspoon salt
- 2 ripe mangoes (peeled and sliced)
- 1 tablespoon sesame seeds (toasted)
- 1 tablespoon coconut flakes (toasted)
Instructions
- Drain the soaked glutinous rice and place it in a steamer lined with cheesecloth. Steam for about 20-25 minutes until tender.
- In a saucepan, combine coconut milk, sugar, and salt. Heat over medium heat until sugar dissolves, but do not boil.
- Once the sticky rice is cooked, transfer it to a mixing bowl and pour half of the coconut sauce over it. Mix well and let it sit for about 10 minutes.
- To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with the remaining coconut sauce. Sprinkle with toasted sesame seeds and coconut flakes.
Notes
- Adjust sugar to taste for sweetness preference.
- Ensure that the rice is soaked adequately for best texture.
