Marinated Lamb Chops

Description

Deliciously marinated lamb chops that are easy to prepare and full of flavor.


Ingredients

Scale
  • 2 lbs fresh lamb chops (rib, loin or shoulder)
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp fresh parsley
  • 1 tbsp minced rosemary
  • 4 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. First, make the marinade by mixing all of the marinade ingredients in a bowl.
  2. Then, add the lamb chops and marinade to a gallon plastic zipper bag. Ensure the marinade is coating the individual lamb chops and place the bag on a dinner plate so they lay flat. Marinade in the refrigerator for 30 minutes or up to two hours. Flip the bag over midway through marinating.
  3. Next, when the chops are done marinating, remove them from the plastic bag and place chops in a baking dish. You may add the remaining marinade to the dish or just discard it. Allow them to come closer to room temperature before baking.
  4. Then, preheat oven to 400°F (200°C). Bake for 20–30 minutes, depending on thickness and how well done you like them. For medium-rare, aim for an internal temp of 135°F (57°C). Well done may take closer to 30 minutes especially if they’re a thicker cut.
  5. Then, after you remove the lamb chops from the oven, let them rest for about 5 minutes before serving to keep them juicy.
