Description

A delicious pumpkin bread pudding perfect for fall or any dessert occasion.


Ingredients

  • 4 cups day-old bread, cubed
  • 1 cup canned pumpkin puree
  • 1 cup toasted pecans, coarsely chopped
  • 1 cup whole milk (or almond milk)
  • 1/2 cup heavy cream
  • 3/4 cup brown sugar
  • 4 large eggs
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cubed bread.
  3. In another bowl, whisk together pumpkin puree, milk, heavy cream, eggs, sugar, salt, cinnamon, nutmeg, and vanilla until smooth.
  4. Pour the pumpkin mixture over the bread and gently fold to coat evenly.
  5. Fold in the toasted pecans.
  6. Transfer the mixture to a greased baking dish and bake for 45-50 minutes until golden brown and set in the middle.
  7. Allow to cool slightly before serving. Pair with whipped cream or ice cream if desired.
