A delicious recipe for grilled salmon paired with caramelized peaches and a sweet honey balsamic glaze.

- 4 fillets salmon (skin-on or skinless)
- 1 teaspoon olive oil (for brushing)
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper (to taste)
- 2 medium peaches (halved and pitted)
- 1 tablespoon honey (for drizzling)
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 1 tablespoon Dijon mustard
- 1 clove garlic (minced)
Instructions
- In a small saucepan, combine balsamic vinegar, honey, Dijon mustard, and minced garlic. Bring to a simmer over medium heat and cook until slightly thickened, about 5-7 minutes. Remove from heat and set aside.
- Preheat the grill to medium-high heat. Brush the peach halves with honey and place them cut-side down on the grill. Grill for about 3-4 minutes until grill marks appear and they are slightly softened. Remove from grill and set aside.
- Brush the salmon fillets with olive oil and season with salt and pepper. Place the salmon on the grill, skin-side down. Grill for about 4-5 minutes on each side, or until cooked through and flakes easily with a fork.
- Plate the grilled salmon, top with grilled peaches, and drizzle with the honey balsamic glaze. Serve immediately.
