Description

A delicious and easy chicken parmesan recipe made in the crockpot, perfect for busy days!


Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 can (14 oz) diced tomatoes (packed in juice)
  • 4 cups low-sodium chicken broth
  • 1 cup freshly grated parmesan cheese
  • 2 tsp Italian seasoning
  • Fresh basil leaves
  • Crusty bread or croutons

Instructions

  1. Chop garlic and keep chicken breasts whole.
  2. Layer whole chicken at the bottom, followed by diced tomatoes and minced garlic.
  3. Add chicken broth until ingredients are just covered.
  4. Sprinkle Italian seasoning generously over the top.
  5. Set crockpot on low heat for about 6 hours.
  6. Remove chicken, shred with forks, return to pot with parmesan cheese, stir to combine.
  7. Serve hot with fresh basil on top.
