Description
A delicious and hearty chili that can easily be made vegetarian by swapping in extra beans or lentils.
Ingredients

- 1 lb Ground Beef or Turkey (Swap for extra beans or lentils for a vegetarian option)
- 1 can Kidney Beans (Drain before adding)
- 1 can Black Beans (Drain before adding)
- 1 can Diced Tomatoes (Use fire-roasted for extra kick)
- 1 cup Tomato Sauce
- 1 Onion (Chop finely)
- 2 cloves Garlic (Mince before adding)
- 2 tbsp Chili Powder (Adjust according to taste)
- 1 tsp Ground Cumin
- 1 tsp Smoked Paprika
- 1 tsp Oregano
- to taste Salt
- to taste Pepper
- 1 cup Bell Pepper (Optional, chop finely)
- 1 cup Corn (Optional)
Instructions
- Brown the meat in a skillet over medium heat for about 5-7 minutes until fully cooked and browned.
- Sauté the finely chopped onion and minced garlic in the same skillet for 2-3 minutes until translucent.
- Transfer cooked meat, sautéed aromatics, drained beans, diced tomatoes, and tomato sauce into the crockpot. Add spices and stir thoroughly.
- Fold in chopped bell pepper and corn if desired.
- Cover and cook on low for 6 hours or high for 3-4 hours.
- After cooking, taste and adjust seasoning before serving hot.
Notes
- This chili can be made in advance and tastes even better the next day.
