Description

A delicious and hearty chili that can easily be made vegetarian by swapping in extra beans or lentils.


Ingredients

  • 1 lb Ground Beef or Turkey (Swap for extra beans or lentils for a vegetarian option)
  • 1 can Kidney Beans (Drain before adding)
  • 1 can Black Beans (Drain before adding)
  • 1 can Diced Tomatoes (Use fire-roasted for extra kick)
  • 1 cup Tomato Sauce
  • 1 Onion (Chop finely)
  • 2 cloves Garlic (Mince before adding)
  • 2 tbsp Chili Powder (Adjust according to taste)
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Oregano
  • to taste Salt
  • to taste Pepper
  • 1 cup Bell Pepper (Optional, chop finely)
  • 1 cup Corn (Optional)

Instructions

  1. Brown the meat in a skillet over medium heat for about 5-7 minutes until fully cooked and browned.
  2. Sauté the finely chopped onion and minced garlic in the same skillet for 2-3 minutes until translucent.
  3. Transfer cooked meat, sautéed aromatics, drained beans, diced tomatoes, and tomato sauce into the crockpot. Add spices and stir thoroughly.
  4. Fold in chopped bell pepper and corn if desired.
  5. Cover and cook on low for 6 hours or high for 3-4 hours.
  6. After cooking, taste and adjust seasoning before serving hot.

  • This chili can be made in advance and tastes even better the next day.
