Description

A delicious spinach and mushroom quiche made with fresh ingredients and baked to perfection.


Ingredients

  • 2 cups fresh spinach
  • 1 cup cremini mushrooms, sliced
  • 4 large large eggs
  • 1 cup milk or half-and-half
  • 1 cup Gruyère cheese, grated
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon nutmeg
  • 1 teaspoon dried thyme or red pepper flakes (optional)
  • 1 tablespoon butter or olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9-inch pie dish with butter or cooking spray.
  2. Melt a tablespoon of butter (or olive oil) in a large skillet over medium heat. Add chopped onion and cook until softened and translucent, about 3-5 minutes. Add sliced cremini mushrooms and cook until all liquid has evaporated and they are golden brown, about 8-10 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Add fresh spinach to the skillet with the cooked mushrooms and onions, cooking until wilted, about 2 minutes. Transfer the mixture to a colander set over a bowl and press down to squeeze out excess liquid. Set aside to cool slightly.
  4. In a large mixing bowl, crack the large eggs and whisk until yolks and whites are combined and slightly frothy. Pour in the milk or half-and-half, then grate in the cheese and add salt, black pepper, and nutmeg. Whisk until well combined.
  5. Fold the cooled spinach and mushroom mixture into the egg and cheese mixture until evenly incorporated. Pour the filling into the prepared pie dish and gently tap it on the counter to settle.
  6. Bake in the preheated oven for 35-45 minutes, until the edges are set and lightly golden, and the center is firm. A knife inserted into the center should come out clean. If the top browns too quickly, tent with aluminum foil.
  7. Remove from the oven and let cool on a wire rack for at least 10-15 minutes before slicing and serving.

Notes

  • For a gluten-free option, serve without a crust or use a gluten-free crust.
