- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons Sriracha sauce (adjust to taste)
- 1 tablespoon honey
- Chopped green onions
- Sesame seeds
Instructions
- In a medium bowl, combine the bite-sized chicken pieces with buttermilk. Season with a pinch of salt and pepper. Let it marinate for at least 15 minutes while you prepare the sauce.
- In a small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and honey until smooth. Set the Bang Bang sauce aside.
- In a shallow dish, mix the flour with garlic powder, paprika, salt, and pepper.
- Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge the chicken pieces in the seasoned flour mixture, pressing to coat evenly.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the chicken pieces in a single layer, working in batches to avoid overcrowding.
- Fry for 3-4 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F). Transfer to a paper towel-lined plate to drain.
- Place the fried chicken in a large bowl. Drizzle with the Bang Bang sauce and toss gently to coat.
- Serve immediately, garnished with chopped green onions and sesame seeds.

- Adjust the spiciness by altering the amount of Sriracha sauce.
- For a crunchier texture, double-dredge the chicken by dipping in buttermilk and then flour mixture twice.
