- 2 cups canned chickpeas, drained and rinsed
- 1/4 cup fresh lemon juice
- 1/4 cup tahini
- 1 small garlic clove, minced
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon ground cumin

- 2 to 3 tablespoons water
- 1/4 cup pine nuts, toasted
- 1/4 cup pomegranate seeds
- 1 tablespoon chopped fresh parsley
- 1 small cucumber, diced
- 1 medium red bell pepper, diced
- 1/4 cup cherry tomatoes, quartered
- 2 tablespoons chopped fresh mint
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Extra virgin olive oil for drizzling
- Smoked paprika or sumac for garnish
Instructions
- Prepare the Hummus: Combine chickpeas, lemon juice, tahini, minced garlic, olive oil, cumin, and salt in a food processor. Process until smooth, adding water gradually until the desired consistency is reached. Taste and adjust seasoning if necessary.
- Prepare the Topping: In a small bowl, mix diced cucumber, red bell pepper, cherry tomatoes, fresh mint, and lemon juice. Season with salt and pepper to taste; set aside.
- Assemble the Platter: Spread the hummus on a large serving platter, creating a well in the middle for toppings. Scatter the cucumber and bell pepper mix around the hummus. Add pomegranate seeds and toasted pine nuts on top of the hummus. Sprinkle with fresh parsley and a dash of smoked paprika or sumac for color.
- Finish and Serve: Drizzle generously with extra virgin olive oil. Serve with pita bread, pita chips, or vegetables for dipping.
