Description

These healthy oatmeal cookies are packed with flavor and nutrients, perfect for a guilt-free treat!


Ingredients

  • 2 cups rolled oats
  • 1/2 cup peanut butter (or any nut butter)
  • 1 teaspoon vanilla extract
  • 2 large ripe bananas (mashed)
  • 1/3 cup chopped fresh strawberries
  • 1 tablespoon ground flaxseed (or one egg)
  • 1/4 cup dark chocolate chips (sugar-free or dairy-free)
  • Sea salt flakes (optional, to garnish)

Instructions

  1. Preheat oven to 350°F and line a sheet pan with parchment paper.
  2. In a large bowl, mash the 2 large ripe bananas. Add the 1/2 cup peanut butter, 1 teaspoon vanilla extract, and 1 tablespoon ground flaxseed. Mix until everything is incorporated.
  3. Add the 2 cups rolled oats and mix well to combine.
  4. Fold in the 1/4 cup dark chocolate chips and 1/3 cup chopped fresh strawberries, then remix.
  5. Using a spoon or scooper, place 12 cookie dough balls on the prepared sheet pan. Sprinkle some sea salt flakes if using.
  6. Bake in the oven for 15 minutes, or until golden brown.
  7. Allow the cookies to cool completely before serving. Enjoy!
