A spicy and delicious stir-fried rice noodle dish featuring Gochujang and fresh vegetables.

- 2 tablespoons Gochujang
- 8 ounces flat rice noodles
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (low-sodium)
- 1 tablespoon sesame oil
- 2 spring onions, chopped for garnish
Instructions
- Prepare all ingredients by chopping vegetables and mincing garlic.
- Boil water in a large pot and cook rice noodles according to package instructions until tender. Drain and set aside.
- Heat sesame oil in a pan over medium heat; sauté minced garlic until fragrant.
- Add bell peppers and carrots to the pan; cook until slightly softened.
- Stir together Gochujang and soy sauce in a bowl; pour over sautéed vegetables and mix well.
- Fold the cooked noodles into the sauce mixture, cooking for an additional 2-3 minutes until heated through.
- Serve garnished with chopped spring onions.
