Description

A spicy and delicious stir-fried rice noodle dish featuring Gochujang and fresh vegetables.


Ingredients

  • 2 tablespoons Gochujang
  • 8 ounces flat rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium)
  • 1 tablespoon sesame oil
  • 2 spring onions, chopped for garnish

Instructions

  1. Prepare all ingredients by chopping vegetables and mincing garlic.
  2. Boil water in a large pot and cook rice noodles according to package instructions until tender. Drain and set aside.
  3. Heat sesame oil in a pan over medium heat; sauté minced garlic until fragrant.
  4. Add bell peppers and carrots to the pan; cook until slightly softened.
  5. Stir together Gochujang and soy sauce in a bowl; pour over sautéed vegetables and mix well.
  6. Fold the cooked noodles into the sauce mixture, cooking for an additional 2-3 minutes until heated through.
  7. Serve garnished with chopped spring onions.
