Deliciously seasoned pork chops with mushrooms in a creamy sauce.
Ingredients
- 4 boneless pork chops (about 1 inch thick)
- 8 oz sliced mushrooms
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
- 1 teaspoon dried rosemary or 1 tablespoon fresh rosemary, chopped
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- Salt and pepper to taste

Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides with salt, pepper, thyme, and rosemary.

Sear the Pork Chops: Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear for 3-4 minutes on each side until browned. Remove chops from the skillet and set aside.

Cook the Mushrooms: In the same skillet, add butter. Once melted, add garlic and sauté for 1 minute until fragrant. Add the mushrooms and cook for 5-7 minutes until browned and tender.

Prepare the Sauce: Pour in the chicken broth, scraping up any bits from the skillet. Let it reduce slightly, then stir in the heavy cream. Simmer for 2-3 minutes until the sauce thickens.

Combine and Cook: Return the pork chops to the skillet, spoon sauce and mushrooms over them. Reduce heat to low, cover, and let cook for 5-7 minutes until pork is cooked through.
Notes
- For deeper flavor, marinate the pork chops in herbs and olive oil for a few hours before cooking.
- You can substitute heavy cream with a low-fat option for a lighter sauce.
- Garnish with additional fresh herbs before serving for a fresh touch.
