Description
Deliciously rich cookies featuring fresh cherries and chocolate chips, perfect for any occasion.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh cherries, pitted and chopped
- 1 1/2 cups chocolate chips
- 1/4 cup cherry juice (from fresh cherries or bottled)
- Red food coloring (optional)
Instructions
-
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
-
In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
-
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and cherry juice. If desired, add a few drops of red food coloring to achieve the desired color.
-
In a separate bowl, whisk together the flour, baking soda, and salt.
-
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped cherries and chocolate chips.
-
Drop tablespoon-sized amounts of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
-
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
-
Use ripe, juicy cherries for the best flavor. If fresh cherries are unavailable, you can use frozen cherries, but ensure they are well-drained.
-
Try using dark chocolate chips for a richer flavor or white chocolate chips for a sweeter contrast.
-
Store cookies in an airtight container at room temperature for up to a week. To keep them fresh longer, you can refrigerate or freeze them.
-
If the dough seems too soft, chill it in the refrigerator for about 30 minutes to prevent the cookies from spreading too much during baking.
