Ingredients

  • 2 large eggs

  • Red and green gel food coloring
  • Crushed peppermint candies
  • Whipped cream for topping
  • 1 pinch of salt

Instructions

  1. Prepare the Crust:
    – Preheat your oven to 325°F (163°C).
    – In a small bowl, combine graham cracker crumbs and melted butter.
    – Press the mixture into the bottoms of a lined cupcake or muffin pan.
    – Bake for 5 minutes, then let them cool.
  2. Make the Cheesecake Batter:
    – In a mixing bowl, beat the cream cheese and sugar until smooth.
    – Add eggs one at a time, mixing well after each addition.
    – Stir in the vanilla and peppermint extracts.
    – Add a pinch of salt and mix well.
  3. Create the Swirl:
    – Divide the batter evenly into three bowls.
    – Add red food coloring to the first bowl and green food coloring to the second bowl. Leave the third bowl plain.
    – Drop spoonfuls of each color batter into the crusts, alternating colors.
    – Use a toothpick to swirl the colors gently.
  4. Bake:
    – Bake for 20-25 minutes, or until the edges are set but the center still jiggles slightly.
    – Allow to cool completely, then refrigerate for at least 2 hours.
  5. Serve:
    – Top with whipped cream and sprinkle with crushed peppermint candies before serving.
