  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and sear until golden brown on both sides.
  3. Add minced garlic, thyme, and oregano to the skillet; sauté until fragrant (about 1 minute).
  4. Pour in heavy cream and chicken broth, stirring to combine while scraping the skillet’s bottom. Add Parmesan cheese and let it melt.
  5. If using, stir in fresh spinach until wilted.
  6. Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
