- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 2 tbsp olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 cup low-sodium chicken broth
- 2 cups fresh spinach (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and sear until golden brown on both sides.
- Add minced garlic, thyme, and oregano to the skillet; sauté until fragrant (about 1 minute).
- Pour in heavy cream and chicken broth, stirring to combine while scraping the skillet’s bottom. Add Parmesan cheese and let it melt.
- If using, stir in fresh spinach until wilted.
- Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
Notes
- This dish is perfect served over pasta or rice.
