- 1 cup pitted Medjool dates
- 1 cup chopped walnuts
- 1 ¾ cups all-purpose flour
- 2 tsp baking powder
- ¾ cup granulated sugar
- ½ cup unsalted butter, softened
- 3 large eggs (room temperature)
- 1 zest of orange
- ¼ cup freshly squeezed orange juice
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray.
- In a bowl, soak chopped dates in boiling water for about 10 minutes until plump; drain and set aside.
- In another bowl, whisk together flour, baking powder, and salt; set aside.
- In a mixing bowl, cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time to the butter-sugar mixture; mix well after each addition. Stir in orange zest, juice, and soaked dates.
- Gradually fold in the dry ingredients until just combined; gently fold in walnuts.
- Pour batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick inserted comes out clean.

- Store leftovers wrapped in plastic wrap at room temperature for up to 3 days or in the refrigerator for up to a week.
