Description

A delicious no-bake dessert featuring layers of cream cheese, whipped cream, and fresh blueberries over graham crackers.


Ingredients

Scale
  • 2 ounces cream cheese (softened to room temperature)
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • ½ cup heavy cream
  • 2 sheets graham crackers (1-ounce/30g or use vanilla or chocolate wafers)
  • ½ cup fresh blueberries

Instructions

  1. In a medium bowl, beat the cream cheese, sugar, and vanilla with an electric mixer until smooth. Set aside.
  2. In a separate small bowl, whip the cold heavy cream until thick peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until smooth and well blended.
  4. Place a layer of graham crackers in the bottom of a 10-ounce ramekin or similar dessert dish, breaking them as needed to fit.
  5. Spread half of the cream mixture evenly over the graham crackers.
  6. Sprinkle half of the blueberries over the cream layer.
  7. Add another layer of graham crackers on top of the blueberries.
  8. Spread the remaining cream mixture over the crackers and top with the remaining blueberries.
  9. Cover and refrigerate for at least 3 hours, or overnight, until the layers soften and the cake sets.

Notes

  • This dessert can be made a day in advance for even better flavor.
