Ingredients

  • 2 medium zucchini
  • 1 cup ricotta cheese
  • 1 tablespoon olive oil

  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped (plus extra for garnish)
  • 1 clove garlic, minced

Instructions

  1. Prepare the Zucchini: Wash and trim the ends of the zucchini. Using a mandoline or a sharp knife, slice the zucchini lengthwise into thin strips.
  2. Grill the Zucchini: Preheat a grill or grill pan over medium-high heat. Brush both sides of the zucchini slices with olive oil and season with salt and pepper. Grill the zucchini for about 2 minutes on each side until grill marks appear and the slices become tender. Remove the zucchini from the grill and allow them to cool slightly.
  3. Prepare the Ricotta Filling: In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, basil, parsley, and minced garlic. Mix well and season with salt and pepper to taste.
  4. Assemble the Rolls: Place a spoonful of the ricotta mixture at one end of a zucchini slice. Roll the zucchini slice around the filling to form a roll. Repeat with the remaining slices and filling.
  5. Serve: Arrange the zucchini rolls on a serving platter. Garnish with additional parsley if desired.
