- 8 slices sourdough bread

- 1 tablespoon mayonnaise (optional)

- 2 tablespoons pickles, chopped
- 2 tablespoons ketchup
Instructions
- Prepare the Beef Filling:
- In a skillet, heat olive oil over medium heat. Add onions and cook until caramelized, about 8 minutes.
- Add garlic and cook for another minute until fragrant.
- Increase the heat to medium-high, add ground beef, and cook until browned. Season with salt, pepper, and Worcestershire sauce.
- Once cooked, drain any excess fat and set aside.
- Assemble the Sandwich:
- Spread butter on one side of each sourdough slice.
- On the non-buttered side, spread a thin layer of mayonnaise and Dijon mustard, if using.
- Layer each slice with cheddar and Swiss cheese, then evenly distribute the beef mixture.
- Add chopped pickles for a tangy crunch and a drizzle of ketchup if desired.
- Close the sandwich with another slice of bread, buttered side out.
- Grill the Sandwiches:
- Heat a large skillet or griddle over medium heat.
- Place the sandwiches in the skillet and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Serve:
- Remove from heat and let cool for a minute before slicing in half. Serve warm.
