Description

A delicious and festive red velvet cake perfect for holiday celebrations.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 16 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • Fresh strawberries, cherries, and other berries for garnish
  • Edible gold accents or walnuts
  • Rosemary sprigs for decoration

Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.

  3. Mix Wet Ingredients: In a large bowl, combine the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar. Mix well.

  4. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined and the batter is smooth.

  5. Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

  6. Prepare the Frosting: In a large bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar, beating until light and fluffy. Stir in the vanilla extract.

  7. Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of frosting on top. Place the second cake layer over the frosting. Cover the entire cake with the remaining frosting.

  8. Decorate: Decoratively pipe extra frosting along the top edge of the cake. Add fresh fruit, walnuts, rosemary sprigs, and edible gold accents as desired.

Notes

  • Ensure all ingredients are at room temperature for the best mixing results.
  • If you prefer more intense flavors, add a bit more cocoa powder.
  • For clean and precise frosting, chill the cake layers in the fridge before assembling.
  • Add a bit more buttermilk if batter seems too thick.
  • For added texture, consider folding in some finely chopped nuts into the batter before baking.
