- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 12 oz cremini or white button mushrooms, thinly sliced
- 1 tablespoon all-purpose flour
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon black pepper
- Salt to taste
- 1 tablespoon soy sauce or tamari
- 1/2 cup heavy cream or plant-based cream
- 1 1/2 cups vegetable broth
- Fresh parsley for garnish
Instructions
- In a large skillet, melt butter with olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Add sliced mushrooms and cook for 8–10 minutes until browned and their moisture has evaporated. Stir in minced garlic and cook for 1–2 minutes.
- Season with thyme, rosemary, black pepper, and salt. Sprinkle flour over the mixture and stir constantly for 1 minute.
- Gradually pour in the vegetable broth, scraping up any browned bits. Add soy sauce or tamari and bring to a gentle boil. Reduce heat and simmer for 5–7 minutes.
- Stir in the cream and simmer for an additional 2–3 minutes until thick and creamy.
- Taste and adjust seasoning if needed. Garnish with parsley and serve hot over your favorite dishes.
