Ingredients

  • 12 oz cremini or white button mushrooms, thinly sliced

  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 tablespoon soy sauce or tamari
  • 1/2 cup heavy cream or plant-based cream
  • 1 1/2 cups vegetable broth
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, melt butter with olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Add sliced mushrooms and cook for 8–10 minutes until browned and their moisture has evaporated. Stir in minced garlic and cook for 1–2 minutes.
  3. Season with thyme, rosemary, black pepper, and salt. Sprinkle flour over the mixture and stir constantly for 1 minute.
  4. Gradually pour in the vegetable broth, scraping up any browned bits. Add soy sauce or tamari and bring to a gentle boil. Reduce heat and simmer for 5–7 minutes.
  5. Stir in the cream and simmer for an additional 2–3 minutes until thick and creamy.
  6. Taste and adjust seasoning if needed. Garnish with parsley and serve hot over your favorite dishes.
