Description

A comforting creamy soup that combines all the classic flavors of lasagna in a warm bowl.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 3 tablespoons tomato paste
  • 1 (24 oz) jar marinara sauce
  • 6 cups chicken broth
  • 10 lasagna noodles, broken into pieces
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup ricotta cheese (for serving)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Brown the beef: Heat olive oil in a large soup pot over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks. Drain excess fat if needed.
  2. Sauté aromatics: Add diced onion to the pot and cook for 3–4 minutes, until softened. Stir in minced garlic, oregano, basil, salt, pepper, and red pepper flakes. Cook for another minute until fragrant.
  3. Add tomato paste and sauce: Stir in the tomato paste and let it cook for a minute or two to deepen the flavor. Then pour in the marinara sauce and chicken broth. Stir well to combine.
  4. Simmer the soup: Bring the mixture to a gentle boil, then add the broken lasagna noodles. Reduce heat to a simmer and cook for 10–12 minutes, or until the noodles are tender.
  5. Make it creamy: Once the noodles are cooked, stir in the heavy cream, mozzarella cheese, and Parmesan cheese. Let everything melt together into a thick, creamy soup.
  6. Serve with ricotta: Ladle the soup into bowls and top each with a generous dollop of ricotta cheese. Finish with fresh chopped parsley or basil. Serve hot and enjoy!
