Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish and line it with parchment paper.
  2. Cream together softened butter, 1/4 cup granulated sugar, lemon zest, and vanilla extract in a large bowl until fluffy.
  3. Mix in 1 cup of gluten-free all-purpose flour and kosher salt until well combined.
  4. Press the dough evenly into the bottom of prepared baking dish. Poke a few holes with a fork and bake for 20 minutes.
  5. Prepare the filling by whisking together 3 eggs, 1 cup of granulated sugar, ½ cup lemon juice, remaining lemon zest, and ½ cup gluten-free flour.
  6. Pour the filling over the baked crust and return to oven. Bake for an additional 20-30 minutes, until filling is set.
  7. Cool in the pan for about 20 minutes, transfer to wire rack to cool completely, dust with powdered sugar, and cut into bars.
