- 4 large eggs, separated
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour

Instructions
- Prepare the Ramekins: Preheat the oven to 375°F (190°C). Grease the inside of the ramekins with butter and dust with sugar, ensuring they are evenly coated. Tap out any excess sugar.
- Make the Soufflé Base: In a medium bowl, whisk the egg yolks and half of the sugar until pale and thick. Add the flour, mascarpone cheese, brewed espresso, and coffee liqueur. Mix until smooth.
- Beat Egg Whites: In a separate large bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue to beat until stiff peaks form.
- Combine Mixtures: Gently fold the egg yolk mixture into the beaten egg whites in small batches. Use a spatula to carefully incorporate, maintaining as much air as possible.
- Fill Ramekins: Spoon the mixture into the prepared ramekins, filling them to the top. Smooth the surface with a spatula.
- Bake: Place the ramekins on a baking sheet and bake in the preheated oven for about 12-15 minutes, or until the soufflés have risen and the tops are slightly firm to the touch.
- Serve: Once baked, remove from the oven and dust with cocoa powder. Serve immediately with a dollop of whipped cream and chocolate shavings if desired.
