Description

Instructions

  1. Prepare the Ramekins: Preheat the oven to 375°F (190°C). Grease the inside of the ramekins with butter and dust with sugar, ensuring they are evenly coated. Tap out any excess sugar.
  2. Make the Soufflé Base: In a medium bowl, whisk the egg yolks and half of the sugar until pale and thick. Add the flour, mascarpone cheese, brewed espresso, and coffee liqueur. Mix until smooth.
  3. Beat Egg Whites: In a separate large bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue to beat until stiff peaks form.
  4. Combine Mixtures: Gently fold the egg yolk mixture into the beaten egg whites in small batches. Use a spatula to carefully incorporate, maintaining as much air as possible.
  5. Fill Ramekins: Spoon the mixture into the prepared ramekins, filling them to the top. Smooth the surface with a spatula.
  6. Bake: Place the ramekins on a baking sheet and bake in the preheated oven for about 12-15 minutes, or until the soufflés have risen and the tops are slightly firm to the touch.
  7. Serve: Once baked, remove from the oven and dust with cocoa powder. Serve immediately with a dollop of whipped cream and chocolate shavings if desired.
