Description

A rich and indulgent German Chocolate Roll Cake filled with coconut and pecans, decorated with chocolate ganache.


Ingredients

  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract
  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 egg yolks, beaten
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/3 cups sweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup chocolate ganache or melted chocolate
  • Whole pecans for garnish

Instructions

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
    • In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, water, and vanilla extract to the dry ingredients, mixing until smooth.
    • Pour the batter into the prepared pan and spread evenly.
    • Bake for 12-15 minutes or until the cake springs back when lightly touched.
    • Turn the cake onto a powdered sugar-dusted towel and carefully roll it up. Let it cool completely.
  2. Make the Filling:
    • In a saucepan over medium heat, combine evaporated milk, sugar, egg yolks, butter, and vanilla extract.
    • Stir until the mixture thickens (about 12 minutes).
    • Remove from heat and add the coconut and chopped pecans. Let it cool.
  3. Assemble the Cake:
    • Unroll the cooled cake and spread the filling evenly over it.
    • Re-roll the cake gently without the towel and place it seam side down on a serving platter.
  4. Decorate the Cake:
    • Drizzle chocolate ganache or melted chocolate over the top.
    • Sprinkle additional coconut and chopped pecans on top.
    • Garnish with whole pecans.

Notes

  • Make sure the cake is completely cool before adding the filling to avoid melting it.
  • Use a serrated knife to slice the cake for cleaner cuts.
