A rich and indulgent chocolate profiterole cake that is perfect for special occasions.

Ingredients

Scale
  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • Pinch of salt
  • 1 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • White chocolate for drizzling (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine water, milk, butter, and salt. Bring to a boil.
  3. Add the flour, stirring vigorously until the mixture pulls away from the sides and forms a ball.
  4. Transfer to a mixing bowl. Add eggs one at a time, mixing well after each.
  5. Pipe or spoon small mounds onto the baking sheet.
  6. Bake for 20-25 minutes until golden. Let cool.
  7. Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  8. In a large bowl, combine sugar, flour, cocoa, baking powder, baking soda, and salt.
  9. Add the egg, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water.
  10. Pour into the prepared pan.
  11. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool.
  12. Heat the cream in a saucepan until simmering.
  13. Pour over chopped chocolate. Let sit for a minute, then stir until smooth.
  14. Whip the heavy cream, sugar, and vanilla until stiff peaks form.
  15. Fill the cooled profiteroles with the cream using a piping bag.
  16. Place the chocolate cake on a serving plate.
  17. Spread a layer of chocolate ganache over the cake.
  18. Arrange the profiteroles on top.
  19. Drizzle with white chocolate for decoration, if desired.

Notes

  • Ensure profiteroles are completely cool before filling to prevent the cream from melting.
  • The boiling water in the cake batter ensures a moist cake.
  • Prepare the components in advance for easier assembly.
  • For extra flavor, consider adding a dash of coffee to the chocolate ganache.
