Slow Cooker Chicken Thighs with Butternut Squash and Peas

Description

A delicious and easy slow cooker recipe featuring tender chicken thighs, nutritious butternut squash, and sweet peas. Perfect for a cozy meal.


Ingredients

Scale
  • 4 large chicken thighs (boneless, skinless)
  • 1 cup peas (frozen)
  • 1 cup butternut squash (or carrots, cubed)
  • 1/2 cup chicken broth
  • 2 tsp cornstarch (optional)

Instructions

  1. Put all items into slow cooker except for cornstarch.
  2. Cover and cook on high for 6 hours or low for 8 hours until meat falls apart and shreds easily.
  3. Remove meat, shred or chop into small pieces.
  4. Whisk cornstarch and some of liquid from pot in a cup until smooth, pour into pot and whisk into liquid to thicken.
  5. Put chicken back in, stir.
  6. Turn pot off and allow to cool.
  7. Serve.

  • Can store in refrigerator for up to 3 days or freezer for up to 3 months.
