Ingredients

- 1 lb baby potatoes, halved
- 8 oz block of feta cheese
- 6 cloves fresh garlic, whole
- 3 tbsp extra virgin olive oil
- 2 tsp fresh rosemary or thyme (or your favorite herbs)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Spray a baking dish with nonstick cooking spray.
- Toss halved baby potatoes in olive oil, salt, pepper, and herbs until well-coated.
- Nestle whole garlic cloves among the potatoes and place the block of feta in the center.
- Roast in the preheated oven for 25-30 minutes until potatoes are golden brown and feta is melty.
- Serve warm, drizzling with additional olive oil if desired.
