Description

A delicious dish of roasted baby potatoes, creamy feta cheese, and fragrant garlic.


Ingredients

  • 1 lb baby potatoes, halved
  • 8 oz block of feta cheese
  • 6 cloves fresh garlic, whole
  • 3 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary or thyme (or your favorite herbs)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a baking dish with nonstick cooking spray.
  3. Toss halved baby potatoes in olive oil, salt, pepper, and herbs until well-coated.
  4. Nestle whole garlic cloves among the potatoes and place the block of feta in the center.
  5. Roast in the preheated oven for 25-30 minutes until potatoes are golden brown and feta is melty.
  6. Serve warm, drizzling with additional olive oil if desired.
