- 4 boneless, skinless chicken breasts
- 2 cups mushrooms, sliced
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add the butter. Once melted, add the onions and garlic. Sauté until the onions are translucent. Add the mushrooms and thyme, and cook until the mushrooms are browned and tender.
- Make the Sauce: Pour in the chicken broth and let it simmer for about 3 minutes, allowing it to reduce slightly. Stir in the heavy cream and bring to a simmer. Let it cook for about 5 minutes until the sauce thickens.
- Combine and Cook: Return the chicken breasts to the skillet. Spoon sauce over the chicken and let it simmer for another 5-10 minutes, or until the chicken is cooked through.
- Garnish and Serve: Garnish with chopped fresh parsley before serving.

- For a richer flavor, add a splash of white wine when cooking the mushrooms.
