Ingredients

  • 200g (7 oz) shrimp, peeled and deveined
  • 250g (9 oz) fettuccine or pasta of choice
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Lemon wedges for serving (optional)

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
  2. Sauté the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Sauté until they are pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.
  3. Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a simmer. Reduce the heat to low and stir in the Parmesan cheese until melted and smooth. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.
  4. Combine Pasta and Shrimp: Add the cooked pasta to the creamy sauce and toss to coat. Return the shrimp to the skillet and mix everything until well combined and heated through.
  5. Serve: Transfer the pasta to serving plates. Garnish with fresh parsley and serve with lemon wedges if desired.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the garlic when sautéing.
  • You can substitute half-and-half for heavy cream if desired, but the sauce will be less creamy.
  • Feel free to add vegetables like spinach or mushrooms for added texture and nutrition.
  • Ensure not to overcook the shrimp, as they can become rubbery.
