Description

Enjoy a delightful slice of Creamy Berry Crumble Cake filled with a rich filling, fresh berries, and a crumbly topping!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1 large egg
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 2 cups mixed berries (such as blueberries, raspberries, strawberries)
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • Pinch of salt
  • 1/2 teaspoon lemon zest
  • Icing sugar for dusting
  • Additional berries for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Prepare the Cake Layer: In a medium bowl, mix flour, sugar, baking powder, and a pinch of salt. Add melted butter, milk, and egg, then mix until smooth. Pour the batter into the prepared dish.
  3. Prepare the Creamy Filling: In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth. Gradually add the heavy cream and beat until the mixture is creamy. Spread the cream cheese mixture evenly over the cake batter.
  4. Prepare the Berry Mixture: Toss the berries with sugar, cornstarch, and lemon zest. Evenly distribute the berries over the creamy layer.
  5. Prepare the Crumble Topping: Mix flour and brown sugar in a bowl. Cut in the cold butter using a pastry cutter or your fingers until crumbly. Sprinkle the crumble evenly over the berry layer.
  6. Bake: Bake for 45-50 minutes or until the top is golden brown and the cake is set.
  7. Cool and Serve: Allow the cake to cool in the pan for about 15 minutes before slicing. Dust with icing sugar before serving. Top with additional fresh berries if desired.
