- 2 cups (200g) graham cracker crumbs
- 1/2 cup (115g) unsalted butter, melted
- 1/4 cup (55g) granulated sugar
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) packed brown sugar
- 1/2 cup (115g) unsalted butter, cold and diced
- 1/2 tsp cinnamon
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare the Crust: In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press mixture into the bottom of a 9-inch (23 cm) springform pan. Set aside.
- Make the Cream Cheese Layer: In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix. Beat in eggs one at a time, mixing well after each addition. Stir in sour cream until smooth. Pour cream cheese mixture over the prepared crust.
- Prepare the Apple Filling: In a medium bowl, toss sliced apples with brown sugar, cinnamon, and lemon juice. Spread apple mixture over the cream cheese layer.
- Make the Crumble Topping: In a small bowl, mix flour, brown sugar, and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle the crumble topping evenly over the apples.
- Bake the Cheesecake: Place the springform pan on a baking sheet. Bake in preheated oven for 50–60 minutes, or until the cheesecake is set around the edges but slightly jiggly in the center.
- Cool and Serve: Allow cheesecake to cool at room temperature for an hour. Refrigerate for at least 4 hours or overnight before serving.
