White Chocolate Cranberry Biscotti

Description

Delicious homemade biscotti with white chocolate and dried cranberries.


Ingredients

Scale
  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract
  • 3 large Eggs
  • 1 cup Dried Cranberries
  • 1 cup White Chocolate Chips
  • Cooking Spray as needed

Instructions

  1. Preheat oven to 325 degrees F.
  2. In a bowl, combine the flour, sugar, baking powder, and baking soda until well blended.
  3. In a separate bowl, whisk together the vanilla extract and eggs.
  4. Add the egg mixture to the flour mixture, mixing well.
  5. Next fold in the cranberries and chocolate.
  6. Turn the dough onto a lightly floured surface and knead until the dough is no longer sticky; then form two 12-inch long logs and flatten down so that it is no higher than 1-inch.
  7. Spray a baking sheet with cooking spray, add the dough and bake for 25-30 minutes.
  8. Remove from the oven and allow to cool slightly; then slice diagonally into 1/2-inch slices and put them back on the baking sheet.
  9. Bake for an additional 10 minutes per side and remove from oven.
  10. Let cool and allow to harden before serving.

Notes

  • This biscotti can be stored in an airtight container for up to two weeks.
  • Great for pairing with coffee or tea.
