- Prepare the Cake Batter: In a large bowl, beat the egg yolks with 1/2 cup sugar until thick and pale. Stir in vanilla extract. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the yolk mixture, stirring gently.
- Whip Egg Whites: In another bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/2 cup sugar, continuing to beat until stiff peaks form.
- Combine Ingredients: Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the batter.
- Bake the Cake: Spread the batter evenly in the prepared pan. Bake for 10-12 minutes or until the cake springs back when lightly pressed.
- Roll the Cake: Turn the cake onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper and roll the cake up with the towel from the short end; let it cool completely.
- Make the Filling: Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Assemble the Roll: Unroll the cooled cake, spread the filling evenly over the surface, and re-roll the cake without the towel. Place it seam-side down on a serving platter.
- Decorate: Spread whipped cream or frosting over the top of the roll. Decorate with colorful sprinkles.
