- 1/2 cup (60g) powdered sugar
- 1/2 tablespoon instant coffee granules
- 1 tablespoon hot water
- 1/2 teaspoon vanilla extract
- 1 cup (120g) all-purpose flour
- 1 tablespoon cocoa powder
- 1/4 teaspoon salt
Instructions
- Bloom the coffee: In a small bowl, mix the instant coffee granules with hot water. Stir until completely dissolved. This blooming step helps intensify the coffee flavor in the dough.
- Cream the butter and sugar: In a mixing bowl, cream the softened butter and powdered sugar until smooth. No need for a mixer here—a sturdy spatula or wooden spoon works just fine.
- Add flavor: Mix in the bloomed coffee and vanilla extract until everything is well combined.
- Mix the dry ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, and salt. Gradually add the dry mixture into the wet ingredients. Mix just until the dough comes together.
- Shape the beans: Take about 1 teaspoon of dough and roll it into an oval shape. Use a butter knife or a toothpick to gently press a line down the center of each one to resemble a coffee bean.
- Chill the shaped cookies: Place them on a parchment-lined tray and chill in the refrigerator for at least 30 minutes.
- Bake: Preheat your oven to 325°F (160°C). Bake the cookies for 10–12 minutes. They won’t spread much, and you’ll know they’re ready when the surface looks set but not too dry.
- Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy them once they’re fully cooled, ideally with a cup of coffee or tea.
