Description

Delicious coffee-flavored cookies that resemble coffee beans, perfect for any coffee lover.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar
  • 1/2 tablespoon instant coffee granules
  • 1 tablespoon hot water
  • 1/2 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon salt

Instructions

  1. Bloom the coffee: In a small bowl, mix the instant coffee granules with hot water. Stir until completely dissolved. This blooming step helps intensify the coffee flavor in the dough.
  2. Cream the butter and sugar: In a mixing bowl, cream the softened butter and powdered sugar until smooth. No need for a mixer here—a sturdy spatula or wooden spoon works just fine.
  3. Add flavor: Mix in the bloomed coffee and vanilla extract until everything is well combined.
  4. Mix the dry ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, and salt. Gradually add the dry mixture into the wet ingredients. Mix just until the dough comes together.
  5. Shape the beans: Take about 1 teaspoon of dough and roll it into an oval shape. Use a butter knife or a toothpick to gently press a line down the center of each one to resemble a coffee bean.
  6. Chill the shaped cookies: Place them on a parchment-lined tray and chill in the refrigerator for at least 30 minutes.
  7. Bake: Preheat your oven to 325°F (160°C). Bake the cookies for 10–12 minutes. They won’t spread much, and you’ll know they’re ready when the surface looks set but not too dry.
  8. Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy them once they’re fully cooled, ideally with a cup of coffee or tea.

Notes

  • These cookies can be stored in an airtight container for up to a week.
  • For a chocolate variation, add chocolate chips to the dough.
