Ingredients
Scale
- 1 cup (226g) unsalted butter, melted
- 1 cup (200g) brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 cup (113g) cream cheese, softened
- 2 cups (240g) powdered sugar
- 1/4 cup (57g) unsalted butter, softened
- 1 teaspoon vanilla extract
Instructions
-
Prepare the Batter:
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
- In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until combined.
- Add the eggs and vanilla extract, mixing until smooth.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
-
Create the Cinnamon Swirl:
- Pour half of the blondie batter into the prepared pan.
- Sprinkle 1 teaspoon of cinnamon evenly over the batter.
- Add the remaining batter over the cinnamon layer.
-
Bake:
- Bake in the preheated oven for 25-30 minutes or until the top is set and a toothpick comes out mostly clean.
- Let the blondies cool completely in the pan.
-
Make the Frosting:
- In a bowl, beat the softened cream cheese and butter together until creamy.
- Gradually add the powdered sugar and vanilla extract, beating until well combined and smooth.
- Add the remaining teaspoon of cinnamon and mix until incorporated.
-
Assemble:
- Spread the frosting over the cooled blondies.
- Optionally, dust with additional cinnamon for garnish.
Notes
- Ensure the blondies are completely cool before frosting to prevent the frosting from melting.
- For a more pronounced cinnamon flavor, consider adding a cinnamon-sugar sprinkle on top of the frosting.
- Store leftovers in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate.
