A delicious and cheesy Spinach Lasagna Bake that is perfect for dinner.

- 9 sheets lasagna noodles
- 16 oz spinach
- 15 oz ricotta cheese
- 3 cups mozzarella cheese
- 1 cup parmesan cheese
- 1 large egg
- 3 cloves garlic
- 1 small onion
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- 1/4 teaspoon nutmeg
- 2 cups marinara sauce
- Fresh basil for garnish (optional)
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C).
- Prepare the Spinach Mixture: Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until translucent. Add spinach, salt, pepper, and nutmeg. Cook until the spinach is wilted and all moisture is evaporated. Let it cool slightly.
- Prepare Cheese Mixture: In a mixing bowl, combine ricotta, 2 cups of mozzarella, 1/2 cup of Parmesan, and the egg. Mix well. Add the cooled spinach mixture to the cheese mixture and stir until combined.
- Assemble the Lasagna: Spread 1/2 cup of marinara sauce on the bottom of a 9×13 inch baking dish. Place 3 lasagna noodles over the sauce. Spread half of the spinach-cheese mixture over the noodles. Repeat with another layer of noodles, spinach-cheese mixture, and 1/2 cup of marinara sauce. Top with the final layer of noodles and the remaining marinara sauce. Sprinkle the remaining mozzarella and Parmesan cheeses on top.
- Bake: Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden brown.
- Rest and Serve: Let the lasagna sit for 10 minutes before slicing. Garnish with fresh basil if desired.

- For extra flavor, consider adding a layer of sautéed mushrooms or bell peppers.
- Use a mix of cheeses like fontina or provolone for a unique taste.
- If you like a tangy flavor, add a splash of lemon juice to the spinach mixture.
