Description
This hearty chicken and rice casserole is perfect for family dinners and is easy to make!

- 1 1/2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 can (10 ounces) condensed cream of chicken soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese, divided
- 1/4 cup chopped green onions
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 tablespoons olive oil
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the cooked chicken, cooked rice, cream of chicken soup, milk, sour cream, 1/2 cup of the cheddar cheese, green onions, black pepper, and garlic powder. Mix well.
- Heat olive oil in a skillet over medium heat. Add celery and carrots and cook until softened, about 5-7 minutes.
- Add the softened vegetables to the chicken and rice mixture and stir to combine.
- Pour the mixture into the prepared baking dish.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
- Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Let stand for 5-10 minutes before serving.
Notes
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Feel free to add your favorite vegetables to this dish.
