Description

A delicious and easy taco recipe combining beef and cheese that is perfect for any gathering.

Ingredients

Scale
  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 cup cream cheese
  • 1 cup diced tomatoes with green chilies (drained)
  • 8 taco shells
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1/4 cup water
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Beef: In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent. Add ground beef, cooking until browned. Drain excess fat. Stir in taco seasoning and 1/4 cup water. Simmer for about 5 minutes.
  2. Make the Cheese Sauce: In a microwave-safe bowl, combine cream cheese, cheddar cheese, and diced tomatoes with green chilies. Microwave on medium heat in 30-second intervals, stirring in between, until smooth and creamy. Mix in chopped cilantro and stir well.
  3. Assemble the Tacos: Preheat oven to 350°F (175°C). Place taco shells in a baking dish. Fill each shell with the ground beef mixture. Pour the cheese sauce generously over the beef in each shell.
  4. Bake and Serve: Bake in preheated oven for 5-7 minutes, until taco shells are warm and slightly crispy. Remove from oven and top with sour cream before serving.

Notes

  • For extra flavor, consider adding a pinch of cayenne pepper to the cheese sauce.
  • You can substitute ground turkey or chicken for a leaner option.
  • Add sliced jalapeños for an extra kick.
  • To make the dish more colorful, garnish with diced avocados or chopped green onions before serving.
