- 1 lb ground beef
- 1 packet taco seasoning mix
- 2 cups shredded cheddar cheese
- 1 cup cream cheese
- 1 cup diced tomatoes with green chilies (drained)
- 8 taco shells
- 1/2 cup chopped fresh cilantro
- 1/2 cup diced onions
- 1/2 cup sour cream
- 1/4 cup water
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare the Beef: In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent. Add ground beef, cooking until browned. Drain excess fat. Stir in taco seasoning and 1/4 cup water. Simmer for about 5 minutes.
- Make the Cheese Sauce: In a microwave-safe bowl, combine cream cheese, cheddar cheese, and diced tomatoes with green chilies. Microwave on medium heat in 30-second intervals, stirring in between, until smooth and creamy. Mix in chopped cilantro and stir well.
- Assemble the Tacos: Preheat oven to 350°F (175°C). Place taco shells in a baking dish. Fill each shell with the ground beef mixture. Pour the cheese sauce generously over the beef in each shell.
- Bake and Serve: Bake in preheated oven for 5-7 minutes, until taco shells are warm and slightly crispy. Remove from oven and top with sour cream before serving.
Notes
- For extra flavor, consider adding a pinch of cayenne pepper to the cheese sauce.
- You can substitute ground turkey or chicken for a leaner option.
- Add sliced jalapeños for an extra kick.
