Ingredients
- 1 lb ground beef or shredded beef
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/2 cup diced onions
- 1/2 cup bell peppers (optional)
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 tbsp vegetable oil or butter
- Salsa and sour cream (for serving)
Instructions
- Prepare the Beef Filling:
Heat a skillet over medium heat and add 1 tablespoon of oil or butter. Add onions and bell peppers, sautéing them until soft. Add the ground or shredded beef, breaking it apart and cooking until browned. Stir in garlic powder, cumin, chili powder, salt, and pepper. Cook for another 2 minutes. Remove from heat and set aside.
- Assemble the Quesadillas:
Lay a tortilla on a flat surface and sprinkle half of it with cheese. Add a layer of beef mixture over the cheese. Top with additional cheese. Fold the tortilla over to enclose the filling.
- Cook the Quesadillas:
Heat a non-stick skillet over medium heat and add remaining oil or butter. Place the folded quesadilla in the pan and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted.
- Serve:
Remove from skillet and let it cool slightly before cutting into wedges. Serve with salsa and sour cream if desired.

- For extra flavor, add some chopped cilantro to the beef mixture.
- You can vary the cheese type for different flavors, such as adding Monterey Jack or mozzarella.
- To make the quesadillas extra crispy, consider using a cast-iron skillet.
