A comforting casserole packed with ground beef, potatoes, and cheese.

- 1 lb ground beef
- 28 oz frozen diced potatoes (thawed slightly)
- 1 cup frozen diced onion and bell pepper blend (or fresh)
- 10 oz can cream of mushroom soup
- 1/2 cup sour cream
- 1 1/2 cups shredded sharp cheddar cheese (divided)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika (optional)
- Salt and pepper to taste
- 2 tbsp olive oil or butter (for cooking vegetables)
- Cooking spray (for greasing the baking dish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, brown the ground beef until no pink remains. Drain the excess fat.
- Add olive oil or butter to the skillet, then sauté onion and bell pepper mix for 5–7 minutes. Season with garlic powder, onion powder, paprika, salt, and pepper.
- In a large bowl, combine beef, sautéed vegetables, thawed potatoes, cream of mushroom soup, sour cream, and 1 cup cheddar cheese. Mix well.
- Spread the mixture into the baking dish. Top with remaining 1/2 cup cheddar cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden.
- Let sit for 5–10 minutes before serving. Garnish if desired.
Notes
- This dish can be made ahead and refrigerated before baking.
- Garnish with chopped parsley before serving for added freshness.
