Instructions

  1. Prep Ice Cream Balls: Scoop out ice cream into balls, about 2-3 inches in diameter. Place ice cream balls on a baking sheet lined with parchment paper. Freeze for at least 1 hour or until firm.
  2. Prepare Coating: In a bowl, mix together chopped pecans, crushed cornflakes, ground cinnamon, and brown sugar.
  3. Prepare Batter: In another bowl, combine flour. In a separate bowl, mix beaten eggs and milk.
  4. Coat Ice Cream Balls: Roll each ice cream ball in flour, then dip into the egg mixture. Roll in the pecan-cornflake mixture, ensuring even coating. Return the coated ice cream balls to the freezer for another 1-2 hours, or until very firm.
  5. Frying: Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Quickly fry the ice cream balls until the coating is golden and crispy, about 30 seconds to 1 minute. Use a slotted spoon to remove from oil and drain on paper towels.
  6. Serve: Drizzle with caramel sauce and top with whipped cream if desired. Serve immediately.
