Description
Delicious caramel pecan-fried ice cream dessert that combines the creamy texture of vanilla ice cream with a crunchy pecan coating.
Ingredients
Scale
- 1 quart vanilla ice cream
- 1 cup pecans, finely chopped
- 1 cup cornflakes, crushed
- 1 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 tablespoon milk
- vegetable oil (for frying)
- caramel sauce (for drizzling)
- whipped cream (optional, for garnish)
Instructions
- Prep Ice Cream Balls: Scoop out ice cream into balls, about 2-3 inches in diameter. Place ice cream balls on a baking sheet lined with parchment paper. Freeze for at least 1 hour or until firm.
- Prepare Coating: In a bowl, mix together chopped pecans, crushed cornflakes, ground cinnamon, and brown sugar.
- Prepare Batter: In another bowl, combine flour. In a separate bowl, mix beaten eggs and milk.
- Coat Ice Cream Balls: Roll each ice cream ball in flour, then dip into the egg mixture. Roll in the pecan-cornflake mixture, ensuring even coating. Return the coated ice cream balls to the freezer for another 1-2 hours, or until very firm.
- Frying: Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Quickly fry the ice cream balls until the coating is golden and crispy, about 30 seconds to 1 minute. Use a slotted spoon to remove from oil and drain on paper towels.
- Serve: Drizzle with caramel sauce and top with whipped cream if desired. Serve immediately.
Notes
- Ensure ice cream balls are very firm before frying to prevent melting.
- Work quickly when frying to maintain the shape and temperature of the ice cream.
- Experiment with different nuts or add cocoa powder to the coating for variety.
- Serve with additional toppings like chocolate chips or a sprinkle of sea salt for extra flavor.
