Delicious blackberry-filled sweet rolls topped with a lemon glaze.
Ingredients
Scale
- 4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 1/4 tsp active dry yeast (1 packet)
- 1 cup warm milk (110°F)
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 2 cups fresh or frozen blackberries
- 1/2 cup powdered sugar (for glaze)
- 1 tbsp lemon juice
Instructions
- Prepare the Dough: In a mixing bowl, combine warm milk, sugar, and yeast; let sit for 5 minutes. Add melted butter and eggs. Gradually mix in flour until soft dough forms.
- Knead: Transfer dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
- First Rise: Place dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled.
- Create Filling: Mash blackberries with sugar and lemon juice in a separate bowl.
- Roll and Fill: Roll out dough into a rectangle. Spread blackberry mixture evenly over the dough and roll tightly from one edge.
- Slice & Bake: Cut rolls into 1-inch pieces and place in a greased baking dish. Let rise for another 30 minutes while preheating oven to 375°F (190°C). Bake for 25-30 minutes until golden brown.
Notes
- Make sure the milk is warm, not hot, to activate the yeast.
- For a sweeter glaze, increase the powdered sugar to taste.
